Crockpot Fiesta Chicken Tacos

Ingredients

  • 1 ½ pound chicken breast frozen
  • ½ lb 8oz corn, frozen
  • ½ lb 8oz black beans, canned, rinsed
  • 1 jar salsa
  • ¼ tsp onion powder
  • ¼ tsp dried oregano
  • ½ tsp paprika
  • 1 tsp cumin ground
  • 1 tsp pepper
  • ¼ tsp salt

Instructions

  • Add all ingredients into crockpot.
  • Cover and cook on high for 2-3 hours of low for 6-8 hours.
  • Remove chicken from crockpot and shred with a fork. Place shredded chicken back into the crockpot and mix together.
  • You are ready to build your tacos. Arrange your table with your favorite shells and toppings.

Notes

Tip: For a fun twist, try adding whole grain pasta or brown rice to the crockpot with some water. It turns your taco meat into a great new dish.
