Fresh Fruit Pizza with Chia Pudding

  • Crust:
  • 1 cup almond flour
  • ¼ cup brown sugar
  • ½ cup walnuts finely chopped
  • ¼ cup oats
  • 1 ½ tsp vanilla
  • 1 egg
  • ½ cup applesauce
  • ¼ cup canola oil
  • Filling:
  • 1 cup Chia Pudding see Chia Pudding recipe
  • Topping:
  • Fresh berries of your choice


  • Preheat oven to 375℉.
  • Combine crust ingredients to medium size bowl and stir until evenly combined and no clumps.
  • Add a few tablespoons of canola oil to a seasoned 12” cast iron pan. I use a paper towel to evenly cover the entire surface of the pan. Add batter to pan and evenly spread batter in bottom of pan.
  • Bake for 30 minutes at 375℉.
  • Allow crust to cool for 15-20 minutes.
  • Prepare chia pudding – see chia pudding recipe.
  • Before adding chia pudding to the crust, I use a butter knife or spatula to loosen the crust, which will make it easier when serving later.
  • Now you’re ready to add the chia pudding. Spread pudding evenly across the crust. Take fresh fruit and any other toppings you desire and decorate the top of the pizza. Refrigerate until you’re ready to serve.
