Quinoa Pizza Bites

Ingredients

  • 1 cup quinoa cooked
  • 3 eggs
  • 1 cup mozzarella cheese shredded
  • ¼ cup pepperoni diced
  • ½ teaspoon basil dried
  • ¼ teaspoon oregano dried
  • pizza sauce for dipping

Instructions

  • Preheat oven to 350℉.
  • Cook quinoa according to package (typically takes around 15 minutes).
  • Combine quinoa, eggs, cheese, pepperoni and seasoning and mix until fully incorporated.
  • Using a greased or silicone mini muffin pan, divide mixture into muffin wells. Press mixture in firmly using the back of a spoon.
  • Bake for 25 minutes. Serve immediately with pizza sauce for dipping.
