Preheat oven to 350℉.
Cook quinoa according to package (typically takes around 15 minutes).
Combine quinoa, eggs, cheese, pepperoni and seasoning and mix until fully incorporated.
Using a greased or silicone mini muffin pan, divide mixture into muffin wells. Press mixture in firmly using the back of a spoon.
Bake for 25 minutes. Serve immediately with pizza sauce for dipping.
