Apple Cinnamon Oatmeal Breakfast Rounds

Ingredients

  • 1 cup rolled oats
  • 1 cup white whole wheat flour
  • 2 Tablespoons ground flaxseed
  • 1 ½ teaspoons baking powder
  • 1 ¼ teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 Tablespoons butter softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup applesauce
  • ½ cup pure maple syrup
  • 1 ½ cup apple peeled and grated

Instructions

  • Preheat oven to 325℉.
  • Combine dry ingredient in large bowl, first 6 ingredients.
  • Add in butter, egg, vanilla, applesauce and maple syrup. Mix until evenly combined. Fold in grated apple.
  • Line 2 baking sheets with parchment paper.
  • Using a 1 ounce scoop, divide the batter among the two baking sheets. Place them in rows of 3 x 6.
  • Bake rounds for 11-13 minutes.

Notes

You will notice in the pictures above, we use a convection oven which is why we have both baking sheets in the oven at once. In a standard oven, you will either want to bake each sheet separately or rotate during baking. You may need to add a few extra minutes if you do both baking sheets at once.
