Delicious Kid-Approved Whole Grain Pancakes

Ingredients

  • ¾ cup white whole grain flour
  • ½ cup all-purpose flour
  • 1 egg
  • 1 ¼ cup milk
  • 2 teaspoons cream of tartar
  • ¼ cup real maple syrup
  • 1 ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup unsweetened applesauce
  • pinch of salt

Instructions

  • Mix together all ingredients and whisk until consistency is evenly combined and smooth.
  • Preheat electric skillet (or pan) on medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.
  • Ladle pancake batter to your size preference in the skillet/pan. For medium size pancakes use ¼ cup of batter. We often make mini pancakes which is around 1-2 Tablespoons of batter. Let pancakes cook for approximately 3 minutes, less or more depending on pancake size. You will notice bubbles in the batter and when you flip it, the cooked side will have a nice golden brown color. Flip pancake over and allow pancakes to cook for an additional 2 minutes or so, depending on the size of your pancake.
  • Serve hot with your choice of topping.
