On the weekends, we typically cook up a big breakfast for everyone; kinda makes up for the limited option of cereal, oatmeal and fruit during the work week rush.  I love adding pancakes to our list of weekend breakfast options. Before this recipe, we didn’t serve pancakes quite as much because they weren’t the healthiest of choices.

This recipe makes quite a bit. But with our expanding family, and as the kids grow, we’ll most likely be doubling the batch in the near future.  I also like to cook up extras and toss them in the freezer for a mid-week breakfast… easy to heat up in the toaster or microwave if you make mini pancakes.

OK, let’s get started.  Here’s a list of supplies you’ll need:

AGE APPROPROPIATE COOKING TASKS

Every child’s ability varies depending on maturity or cognitive and physical ability.  Parents need to use their own discretion when assigning tasks.  These are general guidelines for the Delicious Whole Grain Pancakes.

Younger than 3 years old

  • Name and count ingredients with child
  • Help pour ingredients into bowl

3 – 5 years old

  • All of the younger tasks
  • Measure and count ingredients
  • Help whisk ingredients together

6 – 7 years old

  • All of the younger tasks
  • Crack egg into bowl

8 – 9 years old

  • All of the younger tasks

10 – 12 years old

  • All of the younger tasks
  • Use electric skillet, griddle or stove to cook pancakes

FRIENDLY REMINDERS:

  • Wash everyone’s hands!
  • Clean all work surfaces before starting.
  • Leave tasting until the end. Your child might not understand the difference between a ready-to-eat ingredient and a raw unsafe ingredient.
  • It is okay for your kitchen to get a little messy.
  • Keep in mind that your child is learning, so patience is key!

Ingredients

  • ¾ cup white whole grain flour
  • ½ cup all-purpose flour
  • 1 egg
  • 1 ¼ cup milk
  • 2 teaspoons cream of tartar
  • ¼ cup real maple syrup
  • 1 ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ cup unsweetened applesauce
  • pinch of salt

Instructions

  • Mix together all ingredients and whisk until consistency is evenly combined and smooth.
  • Preheat electric skillet (or pan) on medium heat. Use a pan with a nonstick surface or apply a little nonstick spray.
  • Ladle pancake batter to your size preference in the skillet/pan. For medium size pancakes use ¼ cup of batter. We often make mini pancakes which is around 1-2 Tablespoons of batter. Let pancakes cook for approximately 3 minutes, less or more depending on pancake size. You will notice bubbles in the batter and when you flip it, the cooked side will have a nice golden brown color. Flip pancake over and allow pancakes to cook for an additional 2 minutes or so, depending on the size of your pancake.
  • Serve hot with your choice of topping.
